Our kitchen · built in public

Our own pizza kitchen, in the open.

Before we ask you to trust AI with your admin, we’re using it on ours. Ollie is opening a small pizza kitchen, with AI helping on the admin behind it: the fit-out, the costings, the orders, the dough plan.

It is our own business, not a client, and we’ll show what worked and what didn’t.

The oven, late service. An illustration, not our garage.

The route · an example night

Every station hides an admin job.

One pizza night, station by station, as an example. Pick a station: the dot walks there and shows the admin hiding at it, what a machine could draft, check or flag, and what stays with a person.

Orders, gathered in one place

A machine drafts
One order list from the messages, with the time each one wants.
It checks
Every order has a name, a time and a pizza we actually make.
It flags
A time that is already full, or the same order sent twice.
Stays with a person
Saying yes or no, and the regular who wants something off the menu.

Dough, sized to the orders

A machine drafts
The dough for the night, from the orders and the recipe.
It checks
The sums come to the balls we need, with a few spare.
It flags
Orders that have jumped since the dough was mixed.
Stays with a person
The feel of the dough, and the call on the day.

The prove, on a timetable

A machine drafts
When to mix, when the dough comes out of the fridge, when the oven lights.
It checks
The timetable fits the hours before the first pizza.
It flags
A step that is running late.
Stays with a person
Judging when the dough is ready.

The oven is all person

A machine drafts
Nothing. A machine has no business at the oven.
Stays with a person
The fire, the timing and the turn of the peel.

Boxed, and checked against the order

A machine drafts
The allergen sheet that goes in the bag.
It checks
Each box matches its order.
It flags
An order with an allergy note on it.
Stays with a person
The last look before the lid goes on.

Out of the door

A machine drafts
The order the pizzas leave in.
It checks
Every order has gone out.
It flags
One still waiting.
Stays with a person
The hello at the door.

Try it · the dough planner

Dough for the night.

Put in your own recipe and the pizzas you expect. It does the sums and the timings. Nothing you type leaves this page.

Dough balls under a cloth, proving

Sample numbers

The planner needs JavaScript. The sums are simple baker’s percentages: flour is the total dough divided by one plus the water, salt and yeast percentages.

The logbook

Dated, done or planned.

When a date moves, the logbook says so.

Filmed as it happens.

The first episodes are being filmed. They appear here once they are public on the Kaplink YouTube channel.
